Breakfast Quesadillas

Sometimes when I’m tired of the traditional bacon and eggs for breakfast, I switch it up and make a breakfast quesadilla. This one pictured has bacon, eggs, and cheese inside, but you can make them however you want.
Ingredients:
- 2 flour tortillas
- 2 eggs, scrambled
- 1/2 cup shredded cheese
- desired meats and vegetables
- nonstick spray
Directions:
- Cook and season scrambled eggs and set to the side. Do the same with meat and veggies.
- On medium-high heat, coat a medium pan with nonstick spray
- Add 1 tortilla. Sprinkle with a layer of shredded cheese. Add eggs and desired meats and veggies.
- Sprinkle another layer of shredded cheese and top with second tortilla.
- Once the first tortilla is golden brown, use a spatula to carefully flip so the second tortilla is on the bottom. Cook until golden brown. Take spatula and firmly press quesadilla down to flatten.
- Once second tortilla is golden brown, remove from pan.
- Use a pizza cutter to slice quesadilla into 4-8 pieces. Serve with fruit or avocado. Enjoy.
