Breakfast Quesadillas

Sometimes when I’m tired of the traditional bacon and eggs for breakfast, I switch it up and make a breakfast quesadilla. This one pictured has bacon, eggs, and cheese inside, but you can make them however you want.


  • 2 flour tortillas
  • 2 eggs, scrambled
  • 1/2 cup shredded cheese
  • desired meats and vegetables
  • nonstick spray


  1. Cook and season scrambled eggs and set to the side. Do the same with meat and veggies.
  2. On medium-high heat, coat a medium pan with nonstick spray
  3. Add 1 tortilla. Sprinkle with a layer of shredded cheese. Add eggs and desired meats and veggies.
  4. Sprinkle another layer of shredded cheese and top with second tortilla.
  5. Once the first tortilla is golden brown, use a spatula to carefully flip so the second tortilla is on the bottom. Cook until golden brown. Take spatula and firmly press quesadilla down to flatten.
  6. Once second tortilla is golden brown, remove from pan.
  7. Use a pizza cutter to slice quesadilla into 4-8 pieces. Serve with fruit or avocado. Enjoy.
