Red Thai-Curry Chicken
My family loves chicken thighs. I like marinating them in homemade jerk, Korean, BBQ, lemon pepper, or a southern seasoning. I also like them fried, baked, grilled, and pan-seared. While at Walmart one day, I saw this Red Thai Curry Asian packet. It looked interesting, so I tried it. I added green beans and water chestnuts and paired them with Jasmine Rice, which was delicious. Adding a pinch of salt went a long way. Also, ensure your chicken is seasoned and pan-seared well on both sides before adding the curry paste and coconut milk. My family loved it. Enjoy.
